CHILI 
2 lbs. stewing beef, trimmed & cut into 1/2" cubes
2 tbsp. oil
2 c. chopped onion
1 green pepper, cleaned & diced
2 cloves garlic, minced
1 (15 oz.) can Italian plum style tomatoes, drained, cut up
1 beef bouillon cube
2 tbsp. chili powder
1 1/2 tsp. salt
1 tsp. oregano
1 tsp. ground cumin
1 (15 oz.) can kidney beans
Shredded sharp cheddar cheese (opt.)

Brown meat in hot oil in Dutch oven. Add onion, green pepper, garlic, tomatoes, bouillon cube, chili powder, salt, oregano and cumin. Cover and simmer 1 3/4 hours, stirring occasionally. Add undrained beans. Simmer additional 15 minutes. Serve with crackers and shredded cheese if desired.
