MILLIE'S SAUSAGE STEW 
1 lb. Jimmy Dean Pork Sausage
4 lg. zucchini
4 lg. tomatoes (quartered)
4 lg. onions (quartered)
Salt and pepper to taste

Cut zucchini into approximately 2 inch slices. In a Dutch oven or very large skillet, brown sausage as you would hamburger meat. DO NOT drain. Reduce heat to simmer. Add zucchini, tomatoes and onion and cook on simmer for about 1 hour, or until all the vegetables are tender and falling apart. Season with salt and pepper to taste. May be served with rice, or as a complete meal by itself.

For a mild taste use Jimmy Dean "Regular" for a medium spicy taste use 1/2 "Hot" and 1/2 "Regular"; for a very hot spicy flavor use only the "Hot".

This is a great dish for those cold nights.
