CHOCOLATE CHIP MERINGUE COOKIES 
4 egg whits
1/4 tsp. cream of tartar
1/4 tsp. salt
1 1/2 c. sugar
1 tsp. vanilla
1 lg. or 2 sm. pkgs. chocolate chips

Before you begin: remove racks from oven and turn oven on to 400 degrees. Cut heavy brown paper to fit oven racks. Beat egg whites until foamy; add cream of tartar and salt to egg whites and continue beating until stiff. Then add sugar 1 teaspoon at a time. Lastly, fold in chocolate chips and vanilla.

Now drop dough by spoonfuls on paper-covered racks. Put racks back in oven. Turn oven off. Leave overnight without peeking. Makes 72 cookies.
