MEAT PIES (PORK)
4 lbs. ground pork
1 qt. boiling water
3 lg. onions, chopped fine
3 1/2 tsp. salt
1 1/2 tsp. sage or poultry seasoning
1/2 tsp. pepper

In a large kettle mix the ground pork and boiling water well. Add remaining ingredients and mix well. Simmer slowly for 3 hours. Let stand overnight in a cool place.

Next morning, remove some of the fat that has congealed. Heat to lukewarm before putting in unbaked pie crust. Bake pie at 350 degrees for 1 hour. Pies may be made well before the holidays, as they freeze well. When ready to use, partially thaw and reheat. Serve warm.
