PERSIMMON COOKIES 
1 c. sugar
1/2 c. shortening
1 egg
1 c. Persimmon pulp (ripe & soft)
1/2 tsp. pumpkin spice
1/2 tsp. cinnamon
2 c. flour
1 tsp. baking soda
1 tsp. salt
1 c. chopped walnuts

Mix sugar, shortening and egg thoroughly. Add persimmon pulp, pumpkin spice and cinnamon. Mix thoroughly. Add dry ingredients. Mix thoroughly. Stir in nuts. (Do not use mixer.) Drop by teaspoon onto lightly greased cookie sheet. Bake at 350 degrees for 8 to 10 minutes. Cookies should be soft when done.
