LAYERED PIEROGIES 
6 c. hot mashed potatoes
1 (8 oz.) pkg. cream cheese
1 c. sharp cheese

Mix together with mixer.

2 lg. onions, diced & sauteed with 2 sticks butter

Boil lasagna noodles until ready. Put in Corning Ware casserole. Layer lasagna noodles, mashed potatoes, onion mixture, then again, then again and end with potatoes. Top with onions. Cover and cook 20 to 25 minutes covered, about 5 minutes uncovered.

If I want sauerkraut pierogies, instead of cheese use well drained sauerkraut mixed with potatoes. Could layer in a couple layers of boiled cabbage, if desired.
