LASAGNA PIEROGI 
1 pkg. lasagna
Instant potatoes for 6
1 lb. box Velveeta cheese
1/2 c. melted butter
1 c. chopped onions

Fry butter and onions until golden. Cook 9 slices of lasagna noodles until tender. Butter pan (9 x 13 inch) slightly. Prepare potatoes as for six (directed on package). While hot add cheese and mix until melted. Layer 3 noodles on pan, spread half of potatoes, then add 3 more noodles and remainder of potatoes, ending with 3 more noodles, Pour melted butter and onions over top. Cover and bake 45 minutes at 300 degrees. Serves 6.

If you blindfolded me and told me to eat this, I would have sworn it was my mothers homemade pierogies we grew up with. Very easy to make and a real winner with my family. The only thing I would change is cup the cheese in half. 1lb is alittle too cheesy. I make it with 1/2 lb and double the butter and onions. This has saved me from trying to make pierogies from scratch.
