ZUCCHINI ALLA SCAPECE 
2 lbs. med.-size zucchini
1/2 to 1 c. olive oil
1/2 to 2/3 c. fresh mint leaves
3 garlic cloves, minced
Salt and pepper
1/3 c. wine vinegar

Wash zucchini well. Cut into 1/2 inch slices (keep slices dry). Heat some olive oil in large frying pan. Fry zucchini on both sides until golden. Drain zucchini slices on paper towels. Layer fried zucchini slices in a glass or china dish. Between layers - place mint leaves, garlic and sprinkle with salt and pepper.

Heat 3 to 4 tablespoons fresh oil into clean pan and add vinegar. Cook for 2 minutes and pour over zucchini. Chill well before serving with roast or broiled meats or broiled fish.
