CHARLIE'S CINNAMON COFFEE CAKE 
2 1/2 c. white flour
1 c. white sugar
2 tsp. baking powder
1/4 tsp. salt
1 c. milk
1 tbsp. vegetable oil
1/2 stick butter
Brown sugar
Cinnamon

Preheat oven to 350°F.

Prepare one 9 x 13-inch pan or two 9 inch round pans with PAM or other cooking spray. Beat together all ingredients (except brown sugar and cinnamon) until thoroughly mixed. Pour into 9-inch round cake pan (s) to a level of 1 to 1 1/2-inches and sprinkle with cinnamon, brown sugar, and top with thin pats of butter.

Note: Flour may absorb more or less liquid due to storage and harvest conditions, humidity in the environment and other factors. As is true in all baking, adjust recipe for correct consistency. If batter is too thick, add a little extra milk until batter can be spread easily in pan; if batter is too thin, add a few tablespoons of flour at a time until you have a thick but not stiff or dry batter.

Bake until a toothpick inserted in center of cake comes out clean (20 or more minutes - depending upon thickness of cakes).

Serve warm.
