HUMMINGBIRD CAKE 
3 eggs, beat with mixer
3 c. plain flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 1/2 c. oil
2 c. chopped bananas
2 c. chopped pecans (optional)
1 sm. can crushed pineapple, do not drain
1 1/2 tsp. vanilla

Sift flour and measure/sift all dry ingredients together and add everything else and mix well with wooden spoon. Do not beat. Tube pan or bundt pan - 325 degrees for 1 hour and 15 minutes.

FROSTING:

1 (8 oz.) pkg. creamed cheese, softened
1 stick butter, room temperature
1 box powdered sugar
1 tsp. vanilla
A few drops of milk if needed

Beat until fluffy and frost cooled cake.

This makes a large cake and a very pretty one. Serves 12 to 15.
