ZUCCHINI SALAD 
2 tbsp. dehydrated onion, soaked in 1/4 c. wine vinegar
1/2 c. fresh green peppers
1/2 c. fresh celery, sliced thin
6 sm. to med. zucchini, sliced paper thin

MARINADE:

3/4 tsp. sugar
1/2 tsp. pepper
2/3 c. wine vinegar
1 tsp. salt
1/3 c. salad oil

Mix all vegetables. Mix marinade ingredients and pour over vegetables for a minimum of 6 hours. Stir occasionally.
