ZUCCHINI SALAD 
1/2 c. diced zucchini
1/2 c. diced cucumbers
1/2 c. diced mango
1/4 c. diced onion
1/4 c. diced carrot
1 c. diced tomatoes

May add any other fresh vegetables or cooked macaroni. I used Creamy Bacon Reduce Calorie Dressing by Kraft.

Mix well, add your favorite dressing, put on a bed of lettuce and there's lunch!
