ZUCCHINI BREAD 
3 eggs, well beaten
2 c. sugar
1 c. oil
2 c. peeled, grated zucchini
1 tbsp. vanilla
3 c. flour
1/2 c. sour cream
1 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 tsp. nutmeg
1 tbsp. cinnamon
1 c. chopped nuts
1 c. chopped raisins

Beat eggs well until light and frothy. Add sugar gradually and then oil. Continue to beat. Add vanilla and zucchini and stir. Sift flour with dry ingredients and mix slightly. Stir in nuts and raisins. Divide batter into 2 greased and floured loaf pans, 9"x5"x3", and bake for 1 hour at 350 degrees.
