CHICKEN PARMESAN (Microwave
style)
 
2 boneless chicken breasts (pound thin)
3/4 c. seasoned dry bread crumbs
1/4 c. Parmesan cheese
1/4 tsp. paprika
1 egg, beaten with 1/4 c. water
2 tbsp. corn or vegetable oil
1 can (8 oz.) tomato sauce
1/2 tsp. oregano
1 c. shredded Mozzarella cheese

Dip chicken into bread crumbs mixed with Parmesan and paprika, then into egg and again in bread crumb mixture. Coat bottom of oblong baking dish with 1 tbsp. oil. Place chicken in dish, sprinkle with remaining oil.

Heat 2 to 2 1/2 minutes on high; turn chicken over and heat an additional 2 to 2 1/2 minutes on high. Top with tomato sauce and sprinkle with oregano. Heat 3 1/2 to 4 1/2 minutes on high. Sprinkle with Mozzarella and let stand, covered, 5 minutes or until cheese has melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.
