CHICKEN MARSALA 
4 chicken breasts, bite size pieces
1 tbsp. olive oil
Sm. white onion, chopped
1 clove garlic, minced
2 (16 oz.) can Italian style peeled tomatoes, with basil
Dash of salt
1/4 tsp. pepper
2 tsp. dried parsley or 1/2 c. fresh
1/2 c. Marsala

Heat olive oil in large skillet. Brown cut up chicken, garlic and onion. Add Marsala. Chop canned tomatoes, add the tomatoes, including liquid, salt, pepper, and parsley. Simmer 30-45 minutes. Serve over pasta. Top with Parmesan.

I make this chicken marsala with the following changes: I used chicken thighs, substitute chicken broth for tomatoes, add mushrooms, add rosemary.
