SCRAPPLE MEAT LOAF 
2 lbs. ground sirloin
1 lg. potato, pared
1 sm. onion, minced
1 egg, beaten
1 c. chili sauce
1/4 tsp. red pepper
1 1/2 tsp. salt
Pinch cinnamon
1 tsp. butter, softened
Sprig of parsley

Preheat oven to 500 degrees. In bowl stir in meat, potato, onion, egg, 1/2 cup chili sauce, salt, pepper, cinnamon. Rub butter in large skillet. Put in meat mixture shaping to form a large patty. Bake 12 to 15 minutes until done. Remove from skillet to oven. Brown drain fat. Garnish with sprig of parsley.
