BELGIAN ENDIVE 
6 Belgian endive
1 stick butter
1/4 c. vegetable oil
1 c. chicken broth

Cut endive in half lengthwise. Put butter and oil in fry pan. Add endive, cut side down and fry good and brown. Turn each over and fry on other side. Add 1 cup of chicken broth, cover. On low heat steep for 20 minutes.
