QUICK & EASY CHOCOLATE MOUSSE 
2 c. (12 oz.) semi-sweet chocolate chips
1 1/2 tsp. vanilla
1 1/2 c. whipping cream, heated to boiling point
6 egg yolks
2 egg whites
Whipped cream (opt.)

Combine chocolate and vanilla in blender or food processor fitted with a steel knife and mix for 30 seconds. Add boiling cream and continue mixing until chocolate is completely melted.

Add yolks, mix about 5 seconds, then transfer mixture to a bowl and allow to cool, beat egg whites until stiff peaks form. Gently fold into chocolate mixture. Place in serving bowl or glasses, cover with plastic wrap and chill. Serve with whipped cream. 4 to 6 servings.
