REAL CORN BREAD | |
4 tbsp. bacon drippings 2 c. white cornmeal 1 tsp. salt 1/4 tsp. baking soda 1/2 tsp. baking powder 1 lg. egg 1 1/2 c. milk or buttermilk Turn oven to 450 degrees. Put bacon drippings in a 9 inch cast-iron skillet. You may substitute 1 tablespoon butter along with vegetable oil. Put skillet in oven to get hot. Mix cornmeal, salt, soda and baking powder in a big bowl. Add egg and milk or buttermilk and stir until just blended. Pour the hot grease into the cornmeal mixture and mix lightly until the grease is just blended in. Pour batter into the hot skillet and put back into oven for 20 to 25 minutes or until firm in middle and browned. |
