CORN BREAD 
1 1/4 c. all-purpose flour
3/4 c. cornmeal (I prefer yellow)
1/4 c. sugar
2 tsp. baking powder
1/2 tsp. salt (opt.)
1 c. milk (sweet or buttermilk)
1/4 c. Crisco oil
2 egg whites or 1 egg, beaten
Bacon drippings

Heat oven to 400 degrees. Grease 8" or 9" baking pan or iron skillet. Combine dry ingredients. Stir in milk, oil and eggs, mixing just until dry ingredients are moistened. Pour batter in prepared pan. I melt bacon grease and pour batter into greased pan. Bake 20 to 25 minutes or until light golden brown and wooden pick inserted near center comes out clean.
