CHERRY NUT CAKE 
2 c. flour
1 1/2 c. sugar
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp. cinnamon
2 eggs (Egg Beaters work well)
3/4 c.oil
1 c. nuts, chopped
1 can cherry pie filling

MIX BY HAND. Mix flour, sugar, salt, baking soda and cinnamon together. Beat eggs. Add beaten eggs, oil, nuts and cherry pie filling to above mixture. Put in 9 x 12 inch pan. Bake at 350 degrees for 45 minutes.

FROSTING:

8 oz. pkg. light cream cheese
1/2 stick butter
1 3/4-2 c. powdered sugar
1/2 tsp. vanilla

Beat together with electric mixer, cream cheese and butter until smooth. Add powdered sugar about 1/2 cup at a time and vanilla.
