CHICKEN CACCIATORE 
1 tbsp. butter
1 1/2 c. chopped chicken
1/2 c. chopped onion
1/2 c. chopped celery
1 clove garlic
1 (26 oz.) can whole tomatoes, undrained and chopped
1 c. sliced fresh mushrooms
1/2 c. chopped parsley
1/2 c. chopped green pepper
1 tsp. basil
1 tsp. oregano
1/4 tsp. pepper
1/8 tsp. red pepper

Melt butter in skillet; add chicken, cook until lightly brown. Chop chicken. Add onion, celery, and garlic to butter. Saute until tender. Return chicken to skillet with tomatoes and remaining ingredients. Cover and simmer about 20 minutes. Can be serve over hot rice or noodles. 5 servings.
