BLACK EYED PEAS 
1 lb. black eyed peas
1/4 lb. salt pork or bacon
2 med. onions
1 sm. can tomatoes
1 green pepper
1 c. rice

Boil peas with salt pork or bacon cut into small pieces, slowly. When peas start to break, add diced onion, rice, salt and pepper and tomatoes. Simmer slowly until tender, 2-3 hours. Peas can be soaked overnight. This will aid in cooking time.
