CLAM CHOWDER PROPER NEW ENGLAND STYLE | |
1 qt. fresh clams, cleaned, shelled and chopped 1/2 lb. salt pork cut in small (1/2 inch) dice 1 lg. onion, fine chop 2 c. potatoes, peel and dice and 3 c. water 4 c. whole milk (can be 2 cups fresh and 1 can evaporated) Salt and pepper to taste Saute salt pork very slowly until "well tried" remove and strain well. Keep warm. Add onion to drippings and saute slowly until soft, about 5 minutes. Add potatoes and water and simmer until tender. Add clams and simmer a few minutes more. Add milk, season with salt and pepper and heat just until hot. Serve with "Cracklings" to sprinkle on top. |
