1 c. peanut butter
1/2 c. white sugar
1/2 c. brown sugar
1/4 c. shortening
1/3 c. water
2 c. buttermilk baking mix

Heat oven to 400 degrees. Mix peanut butter, sugars, shortening, and water. Stir in baking mix. Shape dough by rounded teaspoonfuls into balls. Place on ungreased cookie sheet. Flatten cookies in criss-cross pattern with fork dipped in sugar. Bake 5 to 7 minutes. Cool slightly before removing from cookie sheet. Makes 4 dozen.
