SUNSHINE CASSEROLE 
1 lrg. pkg. mixed frozen vegetables, (cauliflower, broccoli, carrots)
1/2 lb. Velvetta cheese
1 tube Ritz crackers
1 stick butter

Cook vegetables according to directions, drain and pour into 1 1/2 quart greased casserole. Top with cubed cheese. Melt butter (be careful NOT to brown). Stir in crushed crackers. Sprinkle butter and crackers on top of casserole. Bake at 350 degrees for 20 minutes.
