RED BRAZILIAN RICE 
1/4 c. chopped red onions
1 fresh tomato, chopped, or 1/2 c. prepared tomato sauce
1 1/2 tsp. drained, crushed capers
2 tbsp. sliced lg. green olives
1 bay leaf
2 tbsp. extra virgin olive oil
3 c. cooked white basmati rice
2 tbsp. pumpkin seeds
1/4 tsp. dried thyme
1/2 tsp. freshly ground black pepper

In a large saucepan, saute the onions, tomatoes, capers, olives, and bay leaf in oil over medium heat until the onions are clear. Add the remaining ingredients and saute another 3 to 4 minutes, until hot. Serve with black beans. Yield: 2 servings.
