BAKED RICE PUDDING 
4 eggs
1 qt. milk
1 c. sugar
2 c. cooked rice
1 tsp. cinnamon
2 tsp. butter
1/2 tsp. salt

Preheat oven to 250 degrees. Butter a 9 x 13 inch baking dish. Break eggs in bowl and beat lightly with fork. Add sugar, salt and cinnamon. Beat again. Add milk and rice and mix together. Pour slowly into baking dish. Dot with butter. Place in oven and bake about 1 1/2 hours. Makes 8 servings.
