LEMON - GARLIC CHICKEN | |
2 whole chicken breasts, split in half 1/2 c. fresh lemon juice 2 tbsp. olive oil 1 tbsp. fresh mint or 1 tsp. dried mint 2 cloves garlic, diced Salt and pepper to taste Wash and pat dry chicken breasts. Place chicken in a shallow glass dish. Combine lemon juice, olive oil, mint, garlic, salt and pepper. Pour over chicken breasts. Cover dish and marinate chicken for several hours or overnight in refrigerator, turning occasionally. Brush grill with vegetable oil. Place chicken on grill skin side up, about 6 inches from medium - hot coals. Cook, turning every 8 to 10 minutes, and baste occasionally. Grill for about 25 minutes or until fork can be inserted in chicken with ease. Makes 4 servings. |
