CHEESECAKE 
Basic Graham Cracker Crust:

1/4 c. butter
1/4 c. sugar
1/4 tsp. cinnamon
1 c. graham cracker crumbs or chocolate wafer crumbs (omit cinnamon)

Mix and press into a 9 inch pie pan. Ready to freeze or bake.

2 (8 oz.) cream cheese, softened
14 oz. sweetened condensed milk
3 eggs
1/4 tsp. salt
1/4 c. lemon juice
8 oz. sour cream

Preheat oven to 300 degrees. (Use springform pan.) Beat cheese until fluffy; add milk, eggs and salt and beat well; stir in lemon juice. Pour into prepared pan; bake 50 to 55 minutes or until cake springs back when lightly touched. Cool to room temperature; chill. Spread sour cream on cheesecake.
