POTATO CANDY | |
1 med. potato 2 1/2 to 3 1/2 c. powdered sugar 1/2 tsp. vanilla Cherries or nuts 3 sqs. baking chocolate Boil potato until done and peel. Mash potato thoroughly. Begin adding powder sugar, small amounts at a time, until potato and sugar mixture is at a rolled dough stage. Pinch off small amount and roll into ball. A small piece of nut or 1/2 cherry (maraschino) may be put inside. Freeze the balls. Melt chocolate and dip balls in chocolate. Serve cold. Can be refrozen. |
