HURRY-UP HOT POTATO SALAD 
3 c. water
1 pkg. scalloped potato mix
3/4 c. mayonnaise or salad dressing
1/4 c. dairy sour cream
2 tbsp. parsley flakes
2 tbsp. Italian salad dressing
14.5 oz. can cut green beans, drained
4 oz. jar sliced pimento, drained
Paprika, if desired

Heat oven to 350 degrees. In medium saucepan, bring water to a boil; add potato slices. Return to a boil; boil 18 to 20 minutes or until tender. Drain.

In ungreased 1 1/2 quart casserole, combine contents of seasoning mix envelope, mayonnaise, sour cream, parsley flakes and Italian dressing; blend well. Stir in cooked potato slices, green beans and pimento; sprinkle with paprika. Bake at 350 degrees for 15 to 20 minutes or until thoroughly heated; stir. Serve warm. 6 to 8 servings.
