MUSHROOM SOUP "GUMBO LEVES" 
1 soup bone
1 1/2 qt. water
1 1/2 tsp. salt
3-4 sprigs parsley
4 med. carrots
1 1/2 lb. mushrooms
1/2 c. butter
1 sm. onion
1 tsp. paprika
4 egg yolks
1 c. cream

Boil in pot put bone, water, salt, and parsley. Skim off foam. After 12/ hour put in small cut carrots. When carrots are done put in mushrooms. Butter and onion cut very fine. Cook slowly for 1 hour. Take out 1 small bowl of soup - not full. Stir in beaten egg yolks and cream until nice. Then slowly add the soup with eggs and cream to pot after you take bone out. Do not boil soup after eggs and cream.
