ZUCCHINI SQUASH BREAD 
2 c. grated zucchini squash (not peeled)
3 eggs, beaten
2 c. sugar
1 c. Crisco oil
1 1/4 tsp. baking powder
3 tsp. vanilla
1 c. crushed pineapple
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon (more if you like lots of cinnamon)
1 c. chopped nuts

Beat eggs to light yellow. Add sugar, oil and zucchini. Mix well. Sift all dry ingredients together and add to first mixture. Blend well. Add nuts and pineapple. Bake at 350 degrees for 1 hour or until done. Makes 2 loaves. Grease and flour loaf pans well. Freezes good. Cupcakes can be made.
