BEEF SUPREME 
2 tbsp. salad oil
1/2 lb. lean beef, cut into 1 inch strips
1 med. onion, sliced thin
1 c. sliced celery
1 green pepper, sliced thin
1 c. cut green beans
1/4 tsp. salt
4 tsp. corn starch
1 tbsp. soy sauce
3/4 c. water
1 can (4 oz.) sliced mushrooms
2 c. cooked rice

Heat salad oil in skillet, add beef strips and brown. Stir in the onions, green pepper, celery, green beans and salt. Cover and cook 3 to 5 minutes on simmer or warm. Blend the corn starch, soy sauce and water.

Pour into mixture stirring until well mixed. Add the sliced mushrooms and simmer approximately 5 minutes, stirring until liquid is clear and shiny and the beans are tender.
