POTATO CAKES 
2 c. mashed potatoes
1/2 c. chopped celery
1/2 c. chopped onions
1 egg
2 tbsp. flour

Take leftover mashed potatoes and add celery, onions, 1 egg, 2 tablespoon flour and mix. Form into patties and fry in oil or butter. When patties are brown around edges, turn and dry until golden brown.
