CHICKEN AND PROCIUTTO 
1 chicken, cut up and salt and peppered
1 tbsp. unsalted butter
1 tbsp. corn oil
1 c. white wine
2 oz. prociutto, sliced into strips
1 tbsp. sage (heaping), crushed between hands
Parsley, chopped (for garnish)
Grated Parmesan cheese to pass

Brown chicken in butter and oil in large fry pan. Remove. Use wine to clear pan. Add chicken and prociutto and sage. Lower heat. Cover and cook slowly, 35-40 minutes. Serve with spaghetti and pan gravy. Pass cheese. Salt and pepper to taste.
