MINCEMEAT COOKIES 
3 1/4 c. flour
1/2 tsp. salt
1 tsp. baking soda
1 c. shortening
1 1/2 c. sugar
3 eggs
1 1/3 c. mincemeat

Mix together dry ingredients. Cream shortening. Add sugar, then eggs; beat until smooth. Gradually add flour mixture, mixing well. Drop by teaspoonfuls, 2 inches apart, on greased baking sheet. Bake at 400 degrees for about 12 minutes. Makes about 5 1/2 dozen cookies.
