PINK POTATO POTAGE | |
1 sm. onion, diced 1 sm. head cabbage, shredded 1 thick slice flanken 3 cloves garlic 4 beets (save smallest), diced 1/2 tsp. salt 1/2 tsp. pepper 3 tsp. sugar or 2 packets Sweet & Low (to taste) 3/4 tsp. sour salt (citric acid) (to taste) 6 sm. or med. potatoes, peeled Saute onion and cabbage 2 minutes. Add flanken, water, garlic, 3 beets, sweetener, salt and pepper. Bring to boil and simmer 1 hour. Add citric acid and potatoes and the small whole beet. Cook another hour. Potatoes will be pink. Adjust flavor - should be sweet and tart. |
