MEXICAN CORN CASSEROLE 
2 lb. ground beef
Salt and pepper to taste
1 can whole kernel corn, drained (or may use fresh corn)
1 can creamed style corn
1 sm. onion, chopped
1/2 green pepper, chopped
A bit of red sweet pepper, chopped or a bit of pimento chopped for color

Crunch some Fritos or other corn chips and put layer in bottom of well-buttered casserole dish. Put in simmered beef, onion, and pepper which have been mixed with corn into casserole.

Top with shredded cheese and another layer of corn chips on top. Bake about 45 minutes at 350 degrees.
