PINEAPPLE CHEESE BALL 
2 (8 oz.) pkgs. cream cheese, softened
8 1/2 oz. crushed pineapple, well drained
1/4 c. finely chopped green pepper
2 tbsp. finely chopped white onion
1 tsp. salt
2 c. chopped pecans (1 for cheese ball, 1 for coating)
4 or 5 oz. shredded cheddar cheese

Combine all ingredients (reserve one cup nuts for coating). Shape into ball and wrap in plastic wrap. Chill for several hours. Then roll ball into remaining chopped nuts. Serve with crackers, melba toast or fruit slices (apple or pear).

Loved it! I made this for our church New Year's Eve get together, it was a big hit! It makes a pretty big ball, which means I have some for myself New Year's Day. I used Lawry's Salt instead of salt (just cuz I love Lawry's so much), tasted great! Will make this again for sure.
