SOUTHERN GOULASH 
1 1/2 lb. ground beef
2 cans tomatoes
1 c. uncooked rice
1 green pepper, chopped
1 onion, chopped
1 tsp. salt
1 tsp. pepper
3-4 bay leaves

In a skillet, brown ground beef until done, drain and transfer to a large pot or Dutch oven. Add tomatoes, rice, pepper, onion, salt, pepper and bay leaves. Cover and simmer for 30 minutes. Remove from heat and cool. Place in refrigerator overnight. Reheat the next day and serve.

The flavor is best the second day, so plan ahead and prepare a day before you wish to serve it.
