ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. oil
2 c. zucchini, peeled and blended
3 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. vanilla
3 tbsp. chopped nuts
3 c. flour

Beat eggs until foamy. Add sugar, oil, zucchini and vanilla; mix lightly but well. Combine flour, salt, baking soda, baking powder and cinnamon; add to zucchini mixture. Stir until well blended. Pour in ungreased pan. Bake at 350 degrees for 1 hour.
