NEVADA TACO DIP 
1 c. finely diced tomatoes
1 c. finely diced, peeled cucumber
1/4 c. finely diced onion (opt.)
1/4 c. finely diced green pepper (opt.)
1/4 c. diced avocado (opt.)
1 c. diced cheddar cheese
1 c. picante sauce (mild, med. or hot, whichever you prefer)

Dice and drain vegetables. Mix in diced cheese and picante sauce. Refrigerate and stir before serving. Serve with corn chips or vegetable dippers.
