LETTUCE TACOS 
2 lg. tomatoes
1 lg. bell pepper
1 med. carrot
1 med. cucumber
1 c. celery
1 lg. zucchini
1 c. jicama, Iceberg or butter lettuce
Washed and pat dried avocado slices
Alfalfa sprouts
Avocado dressing

Clean and peel all vegetables. Chop them finely by hand. Place avocado slice in center of lettuce leaf. Top with chopped vegetables and alfalfa sprouts. Top with dressing.

AVOCADO DRESSING:

1 med. avocado
1/2 c. water
2 tbsp. olive oil
2 med. basil leaves
1 tbsp. fresh lemon juice
Salt to taste

In blender place avocado and water until smooth. Add oil, herbs, salt and lemon juice. Blend until creamy. Makes 3/4 cup approximately. May be used as a dip.
