MOM'S CHOCOLATE PIE (MODIFIED FOR MICROWAVE) | |
This is so much faster than cooking the custard over boiling water, etc. The results are amazing and you can have the pie ready in a very short time. 1 prepared pie shell (I use Keebler) FILLING: 1 cup sugar 5 tbsp. all-purpose flour 1/2 tsp. salt 3 tbsp. cocoa powder 3 large eggs, separated 2 cups milk 1 tbsp. butter 1 tsp. vanilla In a large microwave safe container, sift together all of the dry ingredients. Separate the eggs and set the whites aside for the meringue. Mix egg yolk with the milk. Add milk mixture to dry ingredients. Whisk until mixed. Microwave on high for about 3 minutes (until the mixture begins to thicken around the edges of the bowl) - remove and stir well with the whisk. Return to microwave and cook for 1 minute - remove and stir well with the whisk. When the mixture has thickened, stop the cooking. Add butter and vanilla and stir until butter is melted. Pour into prepared pie shell. MERINGUE TOPPING: 3 large egg whites 6 tbsp. sugar 1/4 tsp. cream of tartar Beat egg whites until frothy. Gradually add sugar and cream of tartar. Beat until stiff peaks are formed. Add meringue to the pie. Brown the meringue (put the pie under the broiler for a few minutes) before serving. Submitted by: Merle S. |
