PECAN TEATIME TARTS | |
CRUST: 1 stick butter 1 (3 oz.) pkg. cream cheese 1 c. flour FILLING: 1 1/2 c. brown sugar 2 eggs 2 tsp. vanilla 1 1/4 c. broken pecans For the crust, mix softened butter, softened cream cheese and flour to dough that can be handled. Shape into two dozen one-inch balls and press into oiled muffin or tart pans that are about 1 1/2 inches in diameter (such pans can be bought in most household wares stores and are smaller than regular muffin pans). For filling, beat eggs and vanilla, and beat in brown sugar well. Fold in pecans. Fill tart pans and bake at 350 degrees for about 30 minutes, or until crust is slightly brown and the filling is puffed. Cool and remove from pans. These are like a pecan pie in flavor and texture. I think they could be made in regular muffin pans, and thus would be larger. |
