BLACK BEAN & CORN SALAD 
1 (16 oz.) can black beans, rinsed & drained
4 oz. Jack cheese, cubed 1/4"
1 (8 oz.) can whole kernel corn, drained
3/4 c. sliced green onions
3/4 c. thinly sliced celery
1 sm. red pepper, diced
3/4 c. picante sauce
2 tbsp. olive oil
2 tbsp. lemon juice
1 tsp. cumin
1 clove garlic, minced

Combine beans, cheese, corn, onions, celery and red pepper in large bowl.

Combine picante sauce, oil, lemon juice, cumin and garlic.

Toss with bean mixture; chill. Serve with additional picante sauce, if desired. Serves 8-10.
