OVEN BEEF STEW | |
2 lbs. cubed beef stew meat 1 lg. onion, cut up 1 c. celery, sliced 2-3 carrots, sliced 3 c. potatoes, cut in lg. chunks 2 tsp. salt 1/4 tsp. pepper 1/4 c. tapioca 1 lg. (28 oz.) can tomatoes Combine all ingredients in a roasting pan and stir well. Cover and bake 3-4 hours in 325-350 degree oven. Stir gently halfway through baking time. Note: I prefer to brown the meat before adding to other ingredients, but this is not necessary. |
