ITALIAN RICE 
2 tbsp. butter
1/2 c. raw rice
2 c. vegetable stock
1/4 c. grated cheese
1/8 tsp. paprika
1/8 tsp. pepper

Melt butter, add rice and saute for 1 minute. Heat the 2 cups of vegetable stock to boiling point and pour over the rice. Add cheese, paprika and pepper and bake in casserole in 350 degree oven for 1 hour. Cover for last 30 minutes, if necessary. Serves 4.
